Food Contact Sanitizing Solutions Model

The Environmental Protection Agency (EPA) has developed the Food Contact Sanitizing Solutions Model (FCSSM) to estimate unwanted pesticide exposures resulting from the use of sanitizing solutions in commercial food processing.

Background

Sanitizing solutions are used in commercial food processing sites to kill bacteria and other microorganisms that live on the surfaces of equipment, cooking utensils, and other materials that may come into contact with food. This ensures sterilized areas and materials that can be used to prepare, serve, transport, and store consumable products.

Model

This model is meant to decrease the spread of food-borne illness through the sanitization of food-contact surfaces in commercial food processing and allow easy determinations of pesticide exposure risks. FCSSM automates the process of estimating situations where there may be an accidental transfer of sanitizer residue to food items. The model consists of Microsoft Excel spreadsheets that calculate exposure and risk estimates based on input data given by the user. In the FCSSM user guide, EPA includes instructions on how to use the model.
